Italian-inspired broccoli and peppers is flavorful side to chicken and rice. This quick and easy recipe is sure to please everyone at the table.

Ingredients

  • 4 cups fresh broccoli
  • 1 red pepper,
  • 1 yellow pepper
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tomato, cut into wedges and seeded
  • Optional: 1 tablespoon grated Parmesan cheese

Directions

  1. In a large pot or saucepan, bring 6 cups water to a
    boil. Add broccoli; cook, uncovered, 3 minutes.
  2. Drain and immediately place broccoli in ice water.
    Drain and pat dry.
  3. In a large pan or skillet, cook peppers in olive oil for 3
    minutes or until crisp-tender.
  4. Add broccoli, garlic, oregano, salt and pepper; cook 2
    minutes longer.
  5. Add the tomato; heat through. Sprinkle with cheese.
