Recipe of the Week: Peach and Tomato Salsa

Peaches & Tomatoes are late summer crops in Michigan, so they are readily accessible & delicious!

For less spice in the salsa, do not use the seeds of the jalapeno or omit all together.

Ingredients

  • 1 lb tomatoes, diced
  • 1 bell pepper, finely diced
  • 1 1/2 lb peaches, pitted and diced
  • 1 jalapeno, finely diced
  • 1 onion, diced
  • 1/2 bunch cilantro, chopped
  • 1-2 tsp kosher salt
  • 2 tbs lime juice
  • 1/2 tsp ground pepper

Directions

  1. Mix tomatoes-cilantro in a medium bowl
  2. Whisk together lime juice, salt and pepper.
  3. Pour lime juice mixture over other ingredients and
    stir thoroughly
  4. Allow flavors to meld together in the fridge for at
    least 30 minutes.
  5. Serve with baked tortilla chips or as a condiment
    atop of chicken or fish.
