Peaches & Tomatoes are late summer crops in Michigan, so they are readily accessible & delicious!
For less spice in the salsa, do not use the seeds of the jalapeno or omit all together.
Ingredients
- 1 lb tomatoes, diced
- 1 bell pepper, finely diced
- 1 1/2 lb peaches, pitted and diced
- 1 jalapeno, finely diced
- 1 onion, diced
- 1/2 bunch cilantro, chopped
- 1-2 tsp kosher salt
- 2 tbs lime juice
- 1/2 tsp ground pepper
Directions
- Mix tomatoes-cilantro in a medium bowl
- Whisk together lime juice, salt and pepper.
- Pour lime juice mixture over other ingredients and
stir thoroughly - Allow flavors to meld together in the fridge for at
least 30 minutes. - Serve with baked tortilla chips or as a condiment
atop of chicken or fish.
