Italian-inspired broccoli and peppers is flavorful side to chicken and rice. This quick and easy recipe is sure to please everyone at the table.
Ingredients
- 4 cups fresh broccoli
- 1 red pepper,
- 1 yellow pepper
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tomato, cut into wedges and seeded
- Optional: 1 tablespoon grated Parmesan cheese
Directions
- In a large pot or saucepan, bring 6 cups water to a
boil. Add broccoli; cook, uncovered, 3 minutes. - Drain and immediately place broccoli in ice water.
Drain and pat dry. - In a large pan or skillet, cook peppers in olive oil for 3
minutes or until crisp-tender. - Add broccoli, garlic, oregano, salt and pepper; cook 2
minutes longer. - Add the tomato; heat through. Sprinkle with cheese.
